Recipe Nasi Ayam Kak Ida
Boil (yes, terus boil. No need fry onions whatsoever...) chicken pieces with some small red onions (bawang merah), garlic (bawang putih), ginger, lemon grass (serai), a bit of rempah tumis & chicken cubes in a pot of water. Boil till chicken meat become tender & cooked through. I like to cook with very low heat, pot covered. If you boil with high heat (api besar), your chicken will taste like rubber or worse, macam batu! (try it, if you don't believe me).
Soup done, set aside and scoop out chicken pieces. Place chicken in a colander to drain out access fluid.
Rinse to clean rice grains and drain out water thoroughly. Place empty rice pot on stove & light a slow fire. Add some butter (as much as you like, not so much aeh..!!) and fry chopped garlic inside the pot. When fragrant, add in drained rice grains. Stir rice for 10 seconds (not too long on fire). Turn off fire & scoop boiled soup into rice pot just enough to cook rice. Add a stalk of lemon grass & season to taste (salt & pepper). Cook rice like usual (in its cooker).
In a small bowl, mix some oyster sauce & kicap manis (can also add maggie seasoning, up to you. Make sure not too watery). Pour dark sauce mixture evenly over drained cooked chicken pieces. Heat few tablespoons of oil in a wok. With medium high heat, stir fry coated chicken in wok for 1 minute. Your chicken will look like roasted chicken. Careful flipping chicken in wok, don't over do it as your chicken pieces are tender & you might break them into smaller pieces.
Only start cooking your coated chicken pieces when rice is cooked, as your chicken only take about 2 minutes to prepare. Serve for dinner tonight!! Enjoy love!
