What you need :
Diced Chicken / Fresh Prawns / Fish Fillet
Plain Flour or Corn Flour
Curry Leaves (lots of it)
Butter (to your desired amount)
Oil for deep frying
Salt & Pepper
Wok (of course)
How to ... :
Deep fry floured diced chicken / fresh prawn in hot oil. Keep aside.
In fresh wok, add 2 to 3 tablespoons of oil and fry sliced garlic, shallots and curry leaves till fragrant. Pour in evaporated milk and butter. Keep fire at medium, careful not to burn milk. When milk is warm, toss in fried chicken pieces / prawns. Stir till milk and meat combined. Season with salt & pepper. Can add cili padi if you like.
